Middle Eastern Recipes
Middle Eastern cuisine is a rich tapestry of bold spices, fragrant herbs, and ancient tradition. From smoky grilled meats and creamy dips to slow-cooked stews and flaky pastries, it is food that is generous, aromatic, and deeply satisfying.
Middle Eastern cuisine encompasses the diverse culinary traditions of countries including Lebanon, Iran, Turkey, Israel, Jordan, Syria, and the Arabian Peninsula. It is one of the world's oldest food cultures, with many of its core ingredients and techniques tracing back to the earliest agricultural civilisations of Mesopotamia. Today it remains a cuisine of extraordinary depth - intensely spiced in some expressions, delicately fragrant in others, but always rooted in generosity and communal sharing.
The spice cupboard is central to Middle Eastern cooking. Cumin, coriander, turmeric, cinnamon, allspice, and sumac appear throughout the region, often blended into complex spice mixes such as za'atar, baharat, and ras el hanout. These spices are used not just for heat but for warmth, colour, and layered complexity - transforming simple ingredients like chickpeas, lentils, and lamb into deeply flavourful dishes.
Some of the world's most recognisable foods originate from this region. Hummus, made from blended chickpeas and tahini, is now eaten globally. Falafel - crispy fried chickpea patties - is the ultimate street food. Shawarma, slow-roasted spiced meat carved and served in flatbread, is a beloved fast food across the Middle East and beyond. Dishes like kibbeh, mansaf, and Persian rice with golden crust showcase the more elaborate, celebratory side of the cuisine.
Meze culture thrives here just as it does across the broader Mediterranean. Baba ganoush, fattoush, tabbouleh, stuffed vine leaves, and warm flatbreads spread across a shared table represent the Middle Eastern spirit of hospitality at its finest - food as an act of welcome and togetherness.
Legumes, grains, and vegetables are equally important, making the cuisine naturally rich in plant-based options alongside its celebrated meat dishes.
