Mediterranean cuisine is less a single national cooking style and more a shared philosophy - a way of eating shaped by the warm climate, fertile land, and rich cultural history of the countries bordering the Mediterranean Sea. Spanning Southern Europe, North Africa, and the Middle East, it draws together the traditions of Greece, Italy, Spain, Turkey, Lebanon, Morocco, and beyond, united by a common pantry of olive oil, fresh vegetables, legumes, seafood, and aromatic herbs.
At its core, Mediterranean cooking celebrates simplicity and seasonality. Dishes are built around what is fresh and local - ripe tomatoes, aubergines, courgettes, chickpeas, and leafy greens form the backbone of countless meals. Olive oil is the defining fat, used generously for cooking, dressing, and finishing. Fresh herbs like basil, parsley, mint, and thyme appear throughout, alongside warm spices such as cumin, coriander, and paprika in the cuisine's more North African and Middle Eastern expressions.
Seafood plays a central role across the region. Grilled fish, baked prawns, and slow-cooked octopus are staples along the coastline, typically prepared with restraint — a splash of lemon, good olive oil, and little else. Meat, when it appears, tends to be lamb or chicken, often marinated and grilled or slow-cooked with tomatoes, wine, and aromatics.
Some of the world's most universally loved dishes fall under the Mediterranean umbrella - hummus, tabbouleh, stuffed peppers, shakshuka, grilled halloumi, and baked fish with capers and olives. Meze and tapas-style sharing is common across the region, reflecting a culture where food is inseparable from conversation, community, and generous hospitality.
The Mediterranean diet is also widely recognised as one of the healthiest in the world, praised for its emphasis on plants, healthy fats, and whole foods over processed ingredients.
