Tex-Mex is the bold, cheesy, unapologetically indulgent cooking of the Texas-Mexico borderlands - sizzling fajitas, loaded nachos, hearty chilli con carne, and melted cheese over everything. A cuisine that lives by its own rules.

Tex-Mex is one of America's most beloved and distinctive regional food cultures, born from the meeting of two culinary worlds along the Texas-Mexico border. It emerged from the cooking of the Tejano communities - Texans of Mexican descent - who blended the ingredients and techniques of their Mexican heritage with the beef-heavy, wheat-flour traditions of Texas ranching culture. The result is a cuisine that is entirely its own - bigger, bolder, cheesier, and more meat-forward than traditional Mexican cooking, and all the more irresistible for it.

The building blocks of Tex-Mex are immediately recognisable. Flour tortillas, rather than the corn tortillas of authentic Mexican cooking, are the foundation of burritos, quesadillas, and wraps. Yellow cheese - melted generously and without apology - appears on almost everything. Beef, particularly minced and heavily spiced, is the dominant protein, appearing in tacos, enchiladas, and the iconic chilli con carne, a slow-cooked stew of beef, dried chillies, and spices that is as Texan as it gets despite its Mexican-sounding name.

Fajitas - strips of marinated skirt steak or chicken sizzled on a cast-iron griddle and brought to the table still hissing - are perhaps Tex-Mex's greatest contribution to global dining. Nachos, a mountain of tortilla chips loaded with cheese, jalapeños, soured cream, and guacamole, have become a worldwide snacking institution. Refried beans, Spanish rice, and pico de gallo are the faithful supporting cast that complete almost every Tex-Mex plate.

Cumin is the spice that most defines Tex-Mex cooking, used far more heavily than in traditional Mexican cuisine and lending dishes their characteristic warm, earthy depth. Combined with garlic, oregano, and dried chilli, it creates the unmistakable seasoning profile that makes Tex-Mex so immediately satisfying and so easy to love.
