Portuguese cuisine is quietly one of Europe's most rewarding food cultures - unfussy, deeply flavourful, and shaped by a remarkable history of maritime exploration that left a lasting imprint on the country's cooking. When Portuguese sailors set out to navigate the world's oceans in the 15th and 16th centuries, they returned home with spices, ingredients, and techniques that transformed their national cuisine and, in turn, influenced the food cultures of Brazil, Mozambique, Goa, and Macau.

Salt cod, known as bacalhau, is the undisputed centrepiece of Portuguese cooking. Legend has it there are over a thousand ways to prepare it, and while that may be an exaggeration, dishes like bacalhau à brás - shredded salt cod with eggs, onions, and fried potato - and bacalhau com natas - baked with cream and potato - demonstrate the extraordinary versatility of this single ingredient. Beyond bacalhau, fresh seafood is equally celebrated. Grilled sardines, particularly during the summer festivals of Lisbon and Porto, are a national institution, eaten simply with bread, olive oil, and a glass of Vinho Verde.

Inland, the cooking becomes heartier. Caldo verde - a silky soup of potato, kale, and chouriço - is perhaps Portugal's most comforting dish, eaten year-round in homes across the country. Slow-braised pork, roasted chicken with piri piri sauce, and rich bean stews reflect a rural tradition of making the most of simple, available ingredients.

Portuguese pastries deserve a mention of their own. Pastel de nata - the iconic custard tart with its blistered, flaky pastry shell - has earned global admiration and remains one of the world's great baked goods, best eaten warm, dusted with cinnamon.
