The chilli is the defining ingredient of Mexican cuisine, and Mexico is its spiritual home. Hundreds of varieties are grown across the country, each with its own distinct heat level, flavour, and culinary application. Dried chillies - ancho, pasilla, mulato, and chipotle - form the backbone of Mexico's most complex sauces, none more celebrated than mole. Mole negro, a dark, slow-cooked sauce of dried chillies, chocolate, spices, and tomatoes, can contain over thirty ingredients and take days to prepare properly, representing Mexican cuisine at its most ambitious and profound.
The taco, in its countless regional variations, is the great democratic dish of Mexican street food - a warm corn tortilla filled with anything from slow-braised carnitas and smoky al pastor pork to grilled fish with fresh salsa and pickled cabbage.
