Dashi, a simple stock made from kombu seaweed and dried bonito flakes, forms the foundation of countless Japanese dishes, from miso soup and ramen broth to the delicate sauces of kaiseki dining.

Japan's most internationally recognised dishes span an impressive range of texture and technique. Sushi and sashimi celebrate the purity of fresh fish with minimal intervention. Ramen - a richly flavoured noodle broth with regional variations ranging from the soy-based shoyu of Tokyo to the creamy tonkotsu of Fukuoka - has earned devoted global following. Tempura delivers an impossibly light, crisp batter around prawns and vegetables. Tonkatsu, a breaded and fried pork cutlet served with shredded cabbage and tangy sauce, is the ultimate Japanese comfort food.

Seasonality is deeply embedded in Japanese food culture. The arrival of cherry blossom, fresh bamboo shoots, autumn mushrooms, and winter citrus each prompt distinct seasonal menus, reflecting a broader cultural appreciation of transience and the beauty of ingredients at their peak. It is a cuisine that rewards attention, patience, and a genuine curiosity about the natural world.
