The south and Sicily lean towards olive oil, tomatoes, aubergines, capers, and the bold, sunny flavours of the Mediterranean.
Pasta is the thread that runs through it all. Whether fresh or dried, stuffed or shaped, long or short, pasta forms the backbone of Italian cooking in a way that few single ingredients do in any other cuisine. Pizza, originating in Naples, has become a global phenomenon, yet in its simplest Neapolitan form - a thin charred base, San Marzano tomatoes, fresh mozzarella, and basil - it remains a masterclass in doing less, better.
Italian cuisine also has a deep culture of preserving and celebrating seasonal produce. Truffles, porcini mushrooms, artichokes, and fresh seafood each have their moment throughout the year, and Italians take enormous pride in sourcing ingredients from their own region.
