Indian cuisine is one of the world's most diverse and aromatic food cultures - a vast tapestry of regional cooking traditions united by bold spicing, vibrant colour, and an extraordinary depth of flavour built over thousands of years of culinary history.
Indian cuisine is arguably the most complex and diverse food culture on the planet, spanning a subcontinent of 28 states each with their own distinct culinary identity, ingredients, and cooking traditions. To speak of a single Indian cuisine is to overlook an extraordinary breadth of regional variation - the coconut-rich curries of Kerala, the tandoor-fired breads and creamy gravies of the Punjab, the fiery vindaloos of Goa, the delicate vegetarian thalis of Gujarat, and the mustard-seed-tempered fish dishes of Bengal are all expressions of the same vast culinary tradition, yet taste entirely distinct from one another.
Spice is the defining characteristic of Indian cooking, though not simply in terms of heat. The art of Indian cookery lies in the layering and balancing of spices - cumin, coriander, turmeric, cardamom, mustard seed, fenugreek, and garam masala used in varying combinations to create dishes of remarkable complexity and nuance. Each region has its own spice vocabulary, and the same base ingredient can be transformed beyond recognition depending on where in India it is cooked.
The north-south divide in Indian cooking is particularly pronounced. Northern cuisine is characterised by wheat-based breads - naan, roti, and paratha - rich, dairy-laden gravies, and the smoky influence of the tandoor oven. Dishes like butter chicken, dal makhani, and saag paneer have become globally beloved. Southern Indian cooking, by contrast, relies heavily on rice, lentils, tamarind, and coconut, producing lighter, sourer, and often spicier dishes. Dosa - a crisp fermented rice and lentil crêpe served with coconut chutney and sambar - is one of the great street foods of the world.
India's enormous vegetarian tradition, shaped in part by Hindu and Jain religious practice, has produced some of the most inventive and satisfying plant-based cooking anywhere on earth - from chana masala and aloo gobi to dal tadka and paneer tikka.
