The islands of the Caribbean - Jamaica, Trinidad, Barbados, Cuba, Haiti, Puerto Rico, and many more - each have their own distinct culinary identity, yet share a common spirit of bold seasoning, tropical abundance, and food that is made to be enjoyed with warmth and celebration.
The flavours of the Caribbean are immediate and unmistakable. Scotch bonnet chillies bring fierce, fruity heat. Allspice, thyme, ginger, and cinnamon appear in spice blends and marinades throughout the region. Fresh tropical fruits - mango, papaya, pineapple, and coconut - weave their way into both savoury dishes and desserts, adding brightness and natural sweetness that balance the bold spicing throughout.
